Peddie Food Service Serves Up Smiles
When Peddie Food Service (PFS) says they love special requests from students, they really mean it. Student Chimzaram Egbosimba wrote to PFS asking if they knew how to make dodo — a sweet, fried plantain that is well-loved in Nigeria as a snack or accompaniment to main dishes.

A few days later, Nigerian red stew chicken with dodo was on the menu.

“I only requested the dodo and they did their research and added Nigerian stew and chicken to make it a full meal. They went above and beyond,” Egbosimba said. “I was literally beaming all through lunch and had three plates. My other Nigerian friends loved it, too!”

Executive Chef Jeremy Stahl said special requests are welcomed because it allows the students to be involved in meal planning and menus.

“Sometimes they want something they like and sometimes they just want a taste of home, ” Stahl said.

On the day the Nigerian red stew chicken and dodo were served, Stahl said, he was thrilled to see Egbosimba enjoying the dish, but also the other students who were treated to a dish they had never had before.

“Seeing how happy the students were to try something new is the reason why I absolutely love my job and why I do what I do. I am blessed to be a part of this community and honored to be feeding everyone here at Peddie,” he said.
